Double Cheese Spinach Potato Pie

Prep. Time: 15 min. | Bake Time: 30 min.
Makes 6 Servings


Ingredients

*To thaw spinach: Microwave in a large bowl on HIGH for 4-5 minutes. Place in a colander and press firmly with a spoon or spatula to drain liquid.


Instructions

Refresh hashbrown potatoes according to package directions. After 12 minutes, drain and squeeze out any excess liquid from carton.

Heat oven to 425°F. Coat a 9-inch pie dish with cooking spray.

While hashbrowns are standing, combine potato flakes, milk, eggs, Parmesan, pepper and salt in a large bowl. Mix in spinach.

Add oil to refreshed hashbrowns in carton and mix well.

Spread 3/4 of the hashbrowns firmly onto bottom and sides of prepared pie dish. Spoon spinach mixture lightly into dish. Top evenly with remaining hashbrowns, fluffing the hashbrowns with a fork.

Bake until hashbrowns are well-browned and center is set, 30-35 minutes. Let pie stand 10 minutes before slicing into wedges.

Flamin' Cajun Skillet

Prep. Time: 15 min. | Cook Time: 10 min.
Yields: 4 Servings

Preheat oven to 400 degrees. Butter an 8 X 8-inch baking pan.

Refresh potatoes by adding hot water to the fill line. Let stand for 10 minutes.

In a non stick skillet, heat 2 tablespoons of the oil over medium high heat.

Drain the potatoes and add to the skillet.

Cook on one side only until the edges are golden.

Transfer potatoes to the prepared baking pan.

Add the remaining teaspoon of oil to the skillet, heat and add the celery, onions and green bell pepper. Cook until softened and arrange over the potatoes.

Addthe sausage to the skillet and cook until hot. Arrange over the onions/ peppers.

Spoon the sauce over the sausage.

Sprinkle the cheese over all and bake until the cheese has melted, about 10 minutes.

Sprinkle the green onions over all.

*Shortcut to make a Creole sauce: Mix ½ cup of mild salsa and ½ teaspoon of Creole seasoning mix to taste.

Loaded Hashbrown Pancakes

Yields: 10 pancakes

Fill hashbrowns carton to fill line with hottest tap water. Let stand 12 minutes. Drain any excess water.

Whisk eggs, flour and salt in medium-sized bowl. Stir in refreshed hashbrown potatoes, bacon, cheese and chives.

Heat a greased, large non-stick skillet over medium-high heat, or electric griddle to 375°F. Scoop about 1/4 cup of hashbrown potato mixture for each pancake onto the hot skillet, pressing down lightly with the back of a spatula to flatten.

Cook until pancakes begin to turn brown and crisp, about 3 minutes. Flip pancakes and cook an additional 2 minutes.

Serve warm with salsa and sour cream.

Denver Hashbrown Omelet

Heat oven to 450°. Spray a 9 x 13-inch pan with cooking spray.

Fill hashbrown carton to fill line with hot water. Let stand 12 minutes. Drain well.

Heat a skillet over medium heat and add the butter. Once butter melts, add the onion and bell pepper and cook for 5 minutes.

Whisk together eggs and milk in a large mixing bowl. Add salt, potatoes, cheese, ham and vegetables and mix to combine. Transfer mixture to the prepared baking pan.

Bake for 20 minutes, or until cooked through and starting to brown.

Hashbrown Potato Quiche Lorraine

Preheat oven to 375°F.

Fill hashbrowns carton to fill line with hottest tap water. Let stand 12 minutes. Drain any excess water.

Meanwhile, cook bacon and onion over medium-low heat in an oven-proof 9 to 10-inch wide non-stick skillet. Stir only a few times until onions soften and lightly brown, and bacon crisps, 12-15 minutes. Remove with a slotted spoon.

Add enough oil to drippings in pan to make about 2 tablespoons. Spread potatoes evenly in pan and slightly up sides, and gently press down.

Cook on medium-high heat until edges begin to brown, about 5 minutes. Remove from heat.

Arrange cheeses and bacon over potatoes.

Whisk eggs, milk, cream and pepper until blended. Pour evenly into pan. If pan handle is plastic, wrap in double layer of aluminum foil to protect in oven. (Alternatively, potatoes can be slipped into a 9-inch glass pie dish before adding cheese and eggs.)

Bake 25 minutes until puffed and set in center. Serve in wedges.

Southwest Hashbrown Omelet

Yields: 5 Omelets

Fill hashbrowns carton to fill line with hottest tap water. Let stand 12 minutes. Drain any excess water.

Combine hashbrowns, beef, onion and pepper in a large bowl. Mix well.

Heat one tablespoon oil in a large non-stick skillet over medium-high heat; spread hash mixture by the cupful in a thin layer. Fry about 10 minutes, turning once to brown both sides; repeat with remaining hash, adding oil if needed.

Meanwhile, fry eggs to desired doneness. Serve hash topped with an egg.



For Southwest Omelet:

Add 1-1/2 teaspoons chili powder to carton before adding hot water to hashbrown potatoes.

Fill each omelet with 1-2 tablespoons each, salsa, diced ham, and green onions.

Garnish omelet with cilantro and sour cream.

Cheesy Potato Quiche

Prep. Time: 12 min. | Cook Time: 12 min.
Yields: One 10-inch quiche

Prepare hashbrown potatoes according to package instructions in a 10-inch skillet. Press the hashbrowns up the side of the skillet about 1 inch when frying.

Whisk eggs in a medium bowl and stir in half of the green onion, salt and pepper.

Pour egg and onion mixture over browned hashbrown potatoes, making sure to cover entire bottom layer. Top with shredded cheese. Cover and continue cooking on low heat until eggs are firm and cheese is melted, about 8 minutes.

Serve warm and garnish with remaining green onion.
